Saturday

Arrival and accommodation after 2 PM. The evening is open for relaxing and looking around in Tourrettes-sur-Loup.

Sunday

6.00 PM We meet at the main house where Birthe and Arne will brief about the coming week.
6.30-10.30 PM Dinner: Grilled loup with braised fennel.
Pork carré with onions and apples.
Cheeses.
Oven baked fruit with ice cream.

Monday

10.00 AM We start the day preparing basic stocks.
12.30-2.30 PM Lunch: Vegetable soup.
Chicken salad with Parmesan dressing.
Cheeses.
6.30-10.30 PM Dinner: Turbot with tomato and cream of basil.
Warm veal carpaccio with vegetables and herb sauce.
Cheeses.
Blanc manger with stewed fruit.

Tuesday

10.00 AM Visit to a local producer and the market in Vence.
12.30-2.30 PM Lunch: Vegetable pie.
Crostini with goat cheese, Nice salad.
Cheeses.
6.30-10.30 PM Dinner: Bruschetta with artichokes.
Roasted chicken with lemon and Mediterranean herbs.

Apple tart.

Wednesday

10.30 AM We prepare the dinner menu.
12.30-2.30 PM Lunch: Spring carbonara.
Cruditées.

6.30 PM Preparing the dinner menu:
Rouget with garlic emulsion.
Lamb carré with rosemary cream.
Cheeses.
Chocolate dessert.
7.30 PM Rosé tasting.
8.00-10.30 PM Dinner.

Thursday

9.30 AM We drive to Cagnes-sur-Mer to take a stroll at the local market where newly picked produce and fresh fish are brought every day by the local producers. Full of all these wonderful impressions and great purchases we return to Tourrettes-sur-Loup, where we grill outdoors or indoors. The evening is open to recover or maybe you prefer a game of boule in the village square.

Friday

10.30 AM We start the day by preparing for the grand evening menu.
12.30-2.30 PM Lunch: Spring risotto.
Salad with preserved peppers.
Cheeses.
6.30 PM We continue the preparation for the grand menu:
Foie Gras terrine with baked figs.
Lobster with saffron and ginger.
Lightly salted pigeons.
Cheeses.
Crème brulée.
8.00-? PM Dinner.
